An impressive 250 gal copper pot still welcomes everybody who enters this brand-new distillery. Full machinery was designed in collaboration with engineers and artisans at Vendome Copper & Brass works, America’s premier still manufacturer. Ian Glomski, one of the Vitae owners, produces their rum and gin, trying to capture the spirits with their careful production.
Besides production, they also offer tastings, cocktails, and tours behind the scenes. In fact, this is another good example of the local do-it-yourself culture: a really cool bar that makes their own spirits.
Vitae Spirits is owned by a wine family and they run the craft distillery that produces small batch spirits -two varieties of rum and one of gin- with a focus on quality and hands-on artisanal values, the only one in the state that makes rum. In this case, it is made with American sugar cane molasses.
Curiously, Glomski is a former professor of the University of Virginia School of Medicine, a biologist who worked in Paris for the Institute Pasteur, and conducted research into Anthrax in the United States some years ago. He is a scientist that became a passionate distiller in this residential Rose Hill neighborhood.
Keeping in mind their history, it is very interesting is to try their spirits flight and their fancy cocktails. Try the new Shrubs and Bitters or enjoy the classic Daiquiri (with their Platinum Rum) and Gold-n-Stormy (with their Golden Rum). But if you are more a gin kind of guy, go for the Mountain Top Fizz (with Modern Gin).
These folks are always trying new things like aging rum with grilled sugar cane and oak chips and creating new spirits like Buddha’s Hand Anisette, Orange Liquor, Coffee and others that will surely come. Swing by Vitae Spirits because they want to stay local, facilitating small but high quality productions. They also share the patio with Ace so you can grab a BBQ treat to pair with a tasty cocktail.
