JM Stock Provisions and Supply, a butcher and grocer, transports you to a hip Brooklyn shopping experience. The store is housed in an expansive space with brick walls and wooden counters. You can browse through the beanies and plaid shirts as good pop and rock music plays. The staff feels like they could work at a trendy coffee shop instead of being skilled butchers.
The two owners James and Matt, started cutting meat in Brooklyn and came down to Virginia in 2013 to set up two butcheries in Charlottesville and Richmond.
JM Stock sells raw meats directly from the whole animals they buy from local producers of cattle, hog, chicken, lamb, duck and (seasonally) turkey. These farm suppliers practice progressive methods like free-range grazing in how they feed, raise and care for their animals. JM Stock is also proud of its homemade charcuterie. Manager Alex Import even created some of the recipes for the house pates, terrines, and pastrami himself.
The best sellers are the many types of homemade sausages, dry aged steaks, and 5 different types of bacon. Stocks and broths with all their health benefits are also increasingly popular.
JM Stock supports a philosophy of local food. The team doesn’t want to support the big packaged food companies anymore but rather farmers and the local economy. Health and quality are of the utmost importance and you can be sure to find these qualities in each and every product.
For a special treat, if you make it in the morning, you can try the tasso ham sandwiches and coffee!
