Brasserie Saison is a newcomer to Charlottesville’s Downtown Mall, a prime location for a restaurant that’s sure to get people talking. It’s another project by successful chef and entrepreneur, Will Richey, this time partnering with the local Champion Brewery. The space combines a Franco-Belgian casual restaurant with a small brewery and an elegant upscale bar in the basement, which is expected to open early this year.
One look in the kitchen and you will see how everything revolves around Tyler Teass (former Sous Chef at Rose’s Luxury in DC). He’s the conductor of a small culinary orchestra, with a keen focus on the symphony that comes out of the kitchen. The young and talented American chef brings a modern twist to the traditional Benelux menu that Richey conceived.
The flagship dish is steamed mussels with French fries, but other favorites are oysters with michelada on the shell, crispy scallops a la Meuniere, and citrus-poached shrimps. Despite seafood and veggies being the main characters, the thoughtful meat dishes do not disappoint: roast beef “carbonnade”, pork cutlet and duck sausage.
Soon, the brewery will be producing European style beers in-house to pair with the fine cuisine. Non-beer-drinkers will be delighted by the smart and concise wine selection or maybe a Benelux inspired gin cocktail from the drink menu.
Designed by Formworks Architecture (like TEN and Mudhouse), Brasserie Saison is a sophisticated but laid back space, where patrons can expect a comfortable evening of fantastic food and drink. One of those to remember.
